Eight world-class Pizzaiolos go head to head on the pass for one night only in Bali

Luigi’s Hot Pizza, Executive Chef Lorenzo (Lollo) De Petris & Stefano De Caro (Cicerone’s, B’speria Sydney) invite eight pizzaiolos from eight of the most sought after pizza shops and restaurants from around the world to Bali for one night of pizza, pasta, snacks and a good old fashioned rave.

The pizzaiolos are packing their dough for their Bali debut, on a mission to create a unique pizza each. Complemented by a snacks menu, and a tight pasta selection by the pasta master himself De Petris. If sweet is what you’re looking for –  Sydney’s gelato kings, Mapo Gelato, will have got you covered – collaborating with local heroes Stephen Moore and Nalu Gelato.

De Petris and De Caro, met through friends from Lorenzo’s time spent working in kitchens in Sydney. “We met in 2020, about the time he opened Cicerone”. De Petris later invited De Caro to Bali for a collaboration at Mosto, De Petris’ neo-bistro in Berawa, Bali. At this event and a few negronis later Pizza Rave was born.

Baba’s Place, the Marrickville eatery that begun as a warehouse pop-up has since taken Sydney by storm, opening their second restaurant Darrel’s.

Pizza Oltra, brainchild of Deejay Ben Fester and Drew Huston, sharing beginnings as a pop-up in Sydney’s Marrickville, has gone on to become a must-go for the Sydney pizza going public, featuring classic rounds and great tracks.

Cicerone, the unpretentious Italian grungy Surry Hills restaurant with wax candles burning and Italo beats pumping through the speakers has become a stalwart in Sydney’s food scene. Head Chef and Owner Stefano De Caro heroes Roman style pizza, blistered in his wood-fired oven. For the event De Caro is paying homage to Bali, combining his famous Cicerone Diavola with Babi Guling – a one-night only pizza available until sold out.

Pizza Lord aka Emlyn Bilbie of Darlinghurst’s Dimitri’s, considered by many one of Sydney’s best pizzas, is also making the trip.

“Dough is the science, toppings are art”, Feng Chen, Leopard Crust. The Bangkok resident started making pizza at home as a hobby and quickly became one of the World’s most sought after pizzaiolos, famed for crafting her own specialty pizza combinations.

Si Paradiso, the Highgate restaurant turn live music party-bar. Perth’s Amalfi retro throwback redraws the lines between restaurant, bar, club and Instagrammer’s paradise and is known for its fluffy-edged, fermented pizza, and good times.

Matteo Pochintesta of Mapo Gelato, the supreme king of gelato in the super competitive gelato scene in Sydney. Mapo are well known for their flavours in collaboration with well-known SydneSydney and Australian chefs, making produce-driven gelato, sourcing most of their ingredients from NSW farms to create vividly flavoured, Italian-style gelato and sorbets. Their recipes are simple, focusing on using the fewest number of ingredients possible to create profoundly delicious scoops − a feat no better exemplified than in his seasonal summer sorbets, of which up to 60 per cent are made from freshly picked fruit such as red plums, nectarines or blood oranges.

Nalu Gelato on Batu Bolong in Canggu has taken the gelato world of Bali by storm. Just 6 months old, the gelato store by Chef Stephen Moore has gratefully lent their facilities to the inbound Mapo team to collaborate on the magic.
